1 Tbsp olive oil
2 carrots, cut in chunks
2 stalks celery, chopped
1 medium onion, chopped
1 clove of garlic, minced
Heat oil in a dutch oven. Add veggies and saute for five minutes.
2 tsp paprika
1 1/2 lbs. polish or smoked sausage, cut into 1/2″ slices
1/2 tsp salt
1/4 tsp pepper
Add to pot, and cook for 2 minutes.
6 yukon gold potatoes, scrubbed and cubed
3 cups chicken broth
Add to the pot and bring to a boil. Reduce heat, cover and simmer for 20 minutes.
